Healthier Pumpkin Mac and Beer and Cheese

Healthier Pumpkin Mac & Beer & Cheese

The jackets come out of storage, the scarves get wrapped around necks, and the windows which once let in a warm summer breeze are now shut tight. Yep,it’s fall. And I’m pretty happy about that. Baking, cute coats, boots, sweaters, hot tea, and….PUMPKIN! All things pumpkin.C’mon, jump on board the gourd train and join in the obsession. At least it’s a healthier one! Molasses Chocolate Chip Cookie Bars

Hi, I’m Christina and I’m a Gooner. For those who don’t know, that means I’m a fan of Arsenal Football Club – a London football (soccer) team in the Premier League. The season started a few weeks ago, and now we’re in full swing with weekly games! And it’s SO MUCH FUN. There are a few “soccer” bars in my city, and my boyfriend and I have chosen The Highbury Pub as our go-to. And this past…

TARDIS Blue Velvet Cupcakes

Doctor Who is back!!!!! Are you as excited about this as I am? You should be. Because from what I can tell, Peter Capaldi is going to be an amazing 12th Doctor. To celebrate the start of Season 8, I whipped up some TARDIS cupcakes – they have blue velvet cake base, frosted with blueberry cream cheese buttercream, and topped off with the light on that old time machine, in the form of a white…

Firefly Dinner Party

Yep, that says Firefly. That amazing Joss Whedon show that lasted only a season, sadly. To celebrate its awesomeness, and ours, my friends and I had ourselves a Firefly dinner party. We marathoned the show, while eating & drinking themed menu items we made from scratch!

Sweet and Spicy Tofu with Roasted Veggies

Tofu can be a scary thing, but it can also be a great protein substitute! And, if you coat it in flour and bake it, then pour spicy sauce over it….well now we’re talking! I only say it’s scary because, well, it has the weirdest texture, color and smell. But that’s what is so great about it – it’ll take the flavor of anything you put it in. While it’s not something I opt for all the time, it IS a…

Spicy Pasta: Boyfriend Cooks Series

My boyfriend loves spicy food, and luckily I do too! He recently infused vodka with jalapeños, serranos and garlic. And wow is it hot! Makes a heck of a Bloody Mary. But he ingeniously dashed a bit of it into this spicy pasta dish, which he made us for dinner. This simple pasta dish combines big swirly noodles, sweet tomatoes, and spicy ingredients, topped with cool cheese.

Freekeh, Chickpea and Crunchy Veggie Stew

Freekeh – what a freaky word! Haha, ok, that’s not very funny. But it IS an interesting foodstuff. Freekeh is a Middle Eastern grain that’s made from green wheat, which gets roasted in production. In its dry state, it looks like regular brown rice. Once cooked, it has a nice chewy texture that absorbs flavors wonderfully! It’s naturally low in fat, high in protein, and exorbitantly high in fiber…

Vegan Peach Mango IPA Cake

Vegan Peach Mango IPA Cake #reciperedux

It’s time for another Recipe ReDux! Our challenge this month was to create a recipe featuring….drumroll please….booze! Any alcohol of our choosing. And I chose beer! Peach Mango IPA, to be exact.

Vegan Peach Mango IPA Cake | xtinaluvspink.wordpress.com

I cook and bake a lot with alcohol – it’s fun (duh), allows for an extra splash of creativity, and often times lends itself to the science of cooking, by adding carbonation, depth of flavor, and…

Spicy Vegan Mexican Risotto

I think most people tend to hold risotto as an exclusively Italian dish, that’s loaded with butter and cheese. And while that version IS delicious, it doesn’t always have to be so heavy! I whipped up this “Mexican” risotto, with the initial intention of making Mexican rice. But a few ingredients later, and a healthy glug of wine in the pan, and this basic meal transformed into a spicy, healthy,…
